As if winemaking didn't have enough variables already, let's bring one more obstacle to the table: smoke taint. Smoke tainted wines are often described as having aromas and flavors of campfire and old ashtray. These not so pleasant aromas tend to overwhelm and detract from any subtle varietal characteristics. So what do we do? Take all of those processing techniques you use for extracting flavors, aromas and colors and do the exact opposite.
