Increasing the Productivity of Chips Manufacturers Through Utilization of Chip Raw Materials Chopper and Oil Drying Machine

Based on the initial survey, SMEs in Sentra Industri Kripik (Bangsal, Mojokerto, East Java), has several weaknesses which are: (1) the means of production is conventional; (2) the skills of human resources (HR) is still low; (3) and knowledge of product diversification is stilllimited. One of the solutions can be done by using the appropriate technology machines. The experiment was held on the use of appropriate technology machines that includes raw material chips chopper/slicer engine and oil drainer engine, in order to increase the productivity of SMEs processinginferior-tubers. Based on experiments conducted, the research found out that: (1) the use of raw material chips chopper engine can increase the average productivity of chopped raw material chips to 55 kg/hour or an average productivity increase of 300% compared to the productivity of traditionalmethod (as much as 12.5 kg/hour); (2) the use of oil drainer engine can increase productivity draining oil to the chips into 30 kg/hour or an increase in the average productivity of 200% compared to the previous productivity (as much as 10 kg/h); and (3) the content of the oil that is lowon chips will improve product quality of chips (chips not rancid, and the average age of the chips be longer). Based on some of the findings, the study suggested: (1) the chips processing engine be maintained in prime condition, and human resources are needed, specifically as professionaloperators for the chips processing engine; and (2) the oil draining of the fried chips is a critical point of the whole process of making chips; hence, the critical point should be the real concern for chips manufacturers in general.
