There has been a new addition to the Puffed Cakes family from Limagrain Cereales Ingredients (LCI) with the appearance of micro pellets. The LCI range now includes multi-cereal, maize and potato pellets. "These light chips have a major advantage over all their rivals," explained Patricia Panel-Dusseaux, Marketing Manager at LCI. "They are expanded at high temperature in a mould and, hence, contain no cooking fats but remain just as crunchy and melt-in-the-mouth." "LCI have developed their micro range cereals-based pellets to bring new texture, new taste and new colour to puffed cakes. Also, the same technology and same process-but using different raw materials-allows manufacturers to develop new market segments. Therefore, these pellets allow many possibilities of differentiationon their own or mixed with other raw materials-for the biscuit, rusk, dietetic, organic and catering markets.
