FSIS releases third attempt at HACCP validation, but questions remain

USDA's Food Safety and Inspection Service, in Wednesday's Federal Register, announced the availability of its third attempt at a draft HACCP validation guidance, again providing the meat and poultry industry with advice on how to justify their HACCP plans. This time the agency has linked HACCP validation with food safety practices, but it still hasn't provided plant managers with advice on how to select the appropriate scientific literature to support their pathogen interventions.
