摘要

The sampling protocol has been prepared to support the Pathogen Reduction/HACCPregulations. The regulation does not require establishments to conduct their own Salmonella testing. However, for those who choose to conduct their own Salmonella testing program, these protocol outlined in the document provide detailed instruction for sample collection and analysis the same as those used in the FSIS Salmonella testing program for raw meat and poultry products.
