New physiological functions of sericin and its application for cosmetic and food

摘要

This review discusses recent advances in the research on the physiologicla functions of silk protein, sericin and its application for cosmetic and food industry. Sericin has been found to have a water-holding capacity, antioxidant activity and tyrosinase-inhibitory activity, implying its potential usefulness of the application for cosmetic and food. Studies with rats and mice have demonstrated that consumption of sericin prevents constipation, suppresses colon carcinogenesis and enhances intestinal absorption of inerals including iron, zinc, magnesium and calcium. These findings further suggest a usefulness of sericin as a functional food material for health.
