Studies on the Antioxidant Activity of Oil Extract of Curry Leaf in Oil

摘要

Oil extract of curry leaf(Murraya koenijii)showed antioxidant activity in edible oil.Curry leaf appeared to be a potential source of natural antioxidants.Antioxidant activity was calculated in terms of Protective Index(P.I.).Stability of the oil was measured and compared with control by determining peroxide value.
