Saponin composition and physicochemical properties of Korean red ginseng extract were analysed using various extraction conditions. Total saponin and individual ginsenoside concn. of red ginseng extract showed a decreasing trend as the extraction temp. and time increased; extraction at 75 degrees C for 24 h gave the highest concn. However, the concn. of ginsenoside Rg3 increased as the extracting temp. and time increased within the particular range. It was suggested that some ginsenosides changed to ginsenoside Rg3 depending on extraction conditions, leading to an increase in concn. of Rg3. Physicochemical properties of Korean red ginseng extract, based on the extraction conditions, were different compared to those for saponins, therefore as the extraction temp. and time increased degrees Brix and colour differences increased, but pH decreased, indicating stabilization of the overall quality of the product. Therefore, the most appropriate extracting conditions for both product quality of Korean red ginseng extract and stable extraction of saponin was 80 degrees C within 48 h, minimizing the loss of ginsenosides.
