Effects of red pepper seed powder on lipid metabolism in rats fed a high fat-high cholesterol diet were determined. Rats were divided into 5 groups: normal diet group; high fat-high cholesterol diet group; high fat-high cholesterol diet with 5% red pepper seed powder supplemented group (SA group); high fat-high cholesterol diet with 10% red pepper seed powder supplemented group (SB group); and high fat-high cholesterol diet with 15% red pepper seed powder supplemented group (SC group). Blood triglycerides (TG) and cholesterol contents, and LDL-cholesterol and atherogenic index (AI) of red pepper seed powder supplemented groups were markedly decreased compared to the HF group. Blood HDL-cholesterol contents of red pepper seed powder supplemented groups were increased compared to the HF group. However, there was no marked difference in blood HDL-cholesterol between all experimental groups. Hepatic TG and cholesterol contents of red pepper seed powder supplemented groups were markedly decreased compared to the HF group. Faecal total cholesterol and TG contents of red pepper seed powder supplemented groups were markedly increased compared to the HF group. Results suggest that supplementation of red pepper seed powder may have a pronounced effect on markers of lipid metabolism in blood and liver of rats fed a high fat-high cholesterol diet.
