摘要

The need for both fire suppression, in the form of fixed pipe wet chemical fire systems, and kitchen exhaust (hood) cleaning are businesses and practices that resulted from the byproduct of the commercial cooking process. This process resulted in the production of a highly combustible material that adheres to the appliances, hood, hood plenum, hood filters, duct, fan, and surrounding roof top. This byproduct grease is a highly combustible fuel that when ignited causes condensed grease upstream in the exhaust system to liquefy, run back, and intensify a fire that in most cases initially started on a cooking appliance and moved into the exhaust system. Removal of this "liquid gold" (fuel) on a regular basis- based on type of cooking, volume of cooking, and accumulation-reduces the possibility of a fire occurring from the grease itself to near zero.
