Part 1 in this series of 3 papers showed that the moisture content in maize before drying is approximately normally distributed. This paper presents the Michigan State University stochastic models for 1-D concurrent flow and 2-D crossflow drying. The models simulate the final moisture content, and the moisture content distribution and standard deviation of grain leaving the driers. There was acceptable agreement between the experimental and simulated data, and therefore, it is now possible to predict the moisture content range and distribution of maize kernels dried in concurrent flow and cross flow driers.
