Culture media suitable for bacterial counting when assessing the quality of cultured milk products were investigated. The microbial flora in 100 yoghurt, cultured milk and other cultured milk product samples [of Austrian origin?] were investigated using the following culture media: MRS agar with added lactic acid; Leesment agar with added whey; modified Elliker agar; and M17 agar. Streptococcus was more commonly found than Lactobacillus. It was concluded that modified Elliker agar was best suited to total bacterial counts, and that MRS agar with added lactic acid was best suited to counting of Lactobacillus.
