New trial results have revealed the extent to which casein levels in milk can be increased through feeding, potentially increasing cheese yields by up to 5% from the same volume of milk. But while there continues to be no payment by the major processors specifically for milk casein, both farmers and cheesemakers will be unable to capitalise on this significant potential benefit.
