Practitioners in our field have been trying to measure and compare the productivity of their food services for years. However, because there's been a myriad of different methods used and no universally accepted standards, this continues to be a difficult task. To determine the labor productivity for patient food services, the number of patient meals served per labor hour (or minutes of labor per meal served) is frequently calculated. While this sounds relatively simple, there's a tendency to get bogged down in the details, and this causes widely variable results.
