Studies on physico-chemical changes in ber fruits cvs. Umran and Kathaphal were carried out in the Department of Horticulture CCSHAU, Hisar. The fruit weight increased significantly from fruit set to ripening in both the cultivars. The stone attainedits maximum weight much earlier than fruit. TSS, ascorbic acid and sugars increased while acidity decreased during the development of fruits. Higher amount of TSS, ascorbic acid and sugars were recorded in cv Umran than Kathaphal. Kathaphal ber was foundmore acidic as compared to Umran. The content of, chlorophyll-a, chlorophyll-b and total chlorophyll content decreased while carotenoids increased during maturity of ber, however, carotenoid content was recorded more in cv. Umran than Kathaphal.
