FURTHER research on a compound used to produce golden raisins is showing some distinct advantages over traditional methods. The compound, an oil that is sprayed on the grapes, not only quickens drying time, but it allows growers to produce golden raisins without the use of sulfur dioxide. The compound works so well, says Robert Wample, the director of the Viticulture and Enology Research Center at California State University-Fresno, that he can't understand why there isn't more interest from growers. While it is relatively new in the U.S., says Wample, it has been used successfully in Australia for many years. "It ought to be very attractive," says Wample. "I'm amazed more people are not doing it."
