摘要

Glucosinolates are nitrogen- and sulfur-containing natural plant molecules that appear as chemical tags in the botanical order Brassicales, in which the Brassicaceae family is by far the most important. Glucosinolates, with the atypical enzyme myrosinase (EC 3.2.1.147) present in plants, operate like bio-precursors of biologically active and sometimes toxic compounds, typically isothiocyanates and nitriles. Degradation of glucosinolates can also be induced chemically, or to some extent thermally [1].
