Dehydrated product from ber

Ber is a hardy fruit tree and has got great importance as a commercial crop in the states of Punjab, Haryana and Uttar Pradesh. The tree does best on sandy loam, neutral or slightly alkaline soil but it also grows well on laterite, medium black soilswith good drainage or sandy, gravelly, alluvial soil of dry riverbeds. There are 90 or more cultivars in India differing in the habit of the tree, leaf shape, fruit form, size, colour, flavour, keeping quality and fruiting season. Umran variety bears large, golden yellow turning to chocolate brown fruit when fully ripe. The fruits are sweet with 19% TSS; 0.12% acidity; average fruit weight 30-89g and yield 150-200 kg per tree. The ripe fruits are mostly consumed fresh but it can be processed into delicious products such as jams, jellies, juices, RTS beverage, chutney, pickles, powdered pulp, candy and dried fruits. Dried bers can be used in the preparation of various Indian delicacies like halwa, pinnies, laddoos, ice creams, puddings, fruit chats andfruit salads.
