Sales of fromage frais and dairy desserts were valued at f411 mn in 1997, 178 per cent up on the 1990 level. Dairy desserts have been the fastest-growing sector, with sales value more than Trebling between 1990 and 1997. Sector growth has been driven by product Innovation form the major manufacturers, notably through the extension into the Sector of some famous chocolate confectionery bands. Both the low-fat and the Indulgence segments have seen god growth. Dairy desserts are still dominated by the more traditional segments, e.g. mousses And trifles. However, caramel desserts have been the fastest-growing sector since 1993.
