They are celebrated American towns with large Irish-American populations. Not surprisingly, Boston and Chicago are great corned-beef towns - but not just on St. Patrick's Day. Boston-based Boston Brisket and Chicago-based City Foods help lead the corned-beef contingent in the two cities. The two long-time companies pride themselves on their corned beef and their respected reputations for processing the salt-cured product. In the US, corned-beef dishes have long been associated with traditional Irish cuisine. Corned-beef lore has it that the Irish produced a salted beef around the Middle Ages that was the precursor of corned beef. Interestingly, most Irish in Ireland don't view corned beef as native cuisine today - but don't tell Irish-Americans that.
