CANNED FOOD OF CORN BEEF-LIKE OF WHICH RAW MATERIAL IS CHICKEN RAW MEAT AND METHOD FOR ITS MANUFACTURE

PURPOSE: To produce corned beef like canned food having a character completely different from that of conventional corned beef without adding any coloring agent or salting it by using fresh chicken as a raw material. CONSTITUTION: The raw meat of used chicken or broiler is pressurized and heated while adding water, the fat is separated together with water soluble protein and, at the same time, the generated essence is obtained. Next, the loaf of pressurized and heated meat is loosened into fibers, then mixed with fat, spices, whipped cream or coconut butter, afterwards, final water content is adjusted to about from 56% to 60%, the inside of a can is filled with it and after the can is sealed, it is heated and sterilized.
