Functionality of High-Potency Sweeteners

Figure 15 summarizes the reported potency, stability and regulatory status for sweeteners that are, or soon will be, approved by the FDA. The selection of a high-potency sweetener should be based on the application involved and the process required. Blends of multiple sweeteners will frequently provide improved sweetness stability and temporal profile. Flavor enhancement will be specific to the application, the flavor system and the combination of sweeteners.
