Gelled confections such as gummies, gum drops, jelly beans or Turkish delight can be manufactured using a range of gelling agents to create different textures and characteristics. In addition, alternative gelling agents and blends of gelling agents are finding success in providing innovative new textures in many of these confections. Here we will discuss various gelling agents available to confectionery manufacturers. In order to have a good understanding of the benefits and weaknesses of each stabilizer system it is a good idea to first understand the process involved in making such a sweet.
