Nut consumption in the United States and worldwide is at an all-time high and is expected to continue to increase, due largely to the health benefits associated with nut consumption as well as the desirable sensory characteristics that they contribute. The majority of the world's walnuts and pecans are grown in the United States and generate substantial cash farm receipts. Walnuts and pecans are popular inclusions in a variety of confectionery products, yet both present formulation challenges. Oil migration and shelf life represent the two biggest technical challenges when formatting confectionery products with pecans and walnuts.
