Flavor is one of the most relevant aspects of the confectionery industry. According to Mintel data from 2012, almost 60 percent of U.S. consumers who buy into the category like to try new flavors of sweets. Almost 40 percent of U.K. consumers are inclined to experiment with unusual flavors. Trying new flavors in confections is one key to continued commercial success. Despite high interest in new flavors, in 2013 over 50 percent of new sugar and gum confectionery launches globally were the same traditional flavors, demonstrating that although consumers are interested in new flavors they have a tendency to purchase familiar flavors.
