Fruit and fruit-based ingredients offer confectioners an opportunity to add variety to their product line. The natural and wholesome perception of fruit is appealing to consumers. Manufacturers can choose from partially prepared or presta-bilized products or start from fruit components as ingredients. The choice of ingredients depends on the requirements of the application and processing and facility capabilities. The addition of fruit offers dimensions of texture and flavor in addition to wholesome ingredient incorporation. Confectioners, however, must use their own judgment when claiming the benefits of fruit through their product and ensure that the benefit and associated levels are appropriately matched in the final product representation.
