摘要

Food safety is a concern in society today and is an important part of hospitality and culinary students' education. However, research has shown that coursework in food safety does not necessarily influence actual food safety behaviors. This article describes a Scholarships of Teaching and Learning (SoTL) project using an alternative teaching and learning strategy for food safety education. Attitudes toward food safety were measured before and after the completion of the project, and significant differences were found. The project involved the students in development of an observational tool for food-handling behaviors that was perceived positively and merits further study.View full textDownload full textKeywordsFood safety, student observations, teaching, learning, projects, checklistRelated var addthis_config = { ui_cobrand: "Taylor & Francis Online", services_compact: "citeulike, netvibes, twitter, technorati, delicious, linkedin, facebook, stumbleupon, digg, google, more", pubid: "ra-4dff56cd6bb1830b" }; Add to shortlist Link Permalink http://dx.doi.org/10.1080/15428052.2010.490768
