The demand for gluten-free food has drastically increased in recent years. Buehler is a pioneer in this area and, with its Polymatik pasta press, has a proven production solution with which pasta can be manufactured from gluten-free raw materials, such as corn or rice, at high quality and with a firm texture. Yet with this innovative process technology, conventional raw materials containing gluten (such as durum wheat semolina or wheat flour) or local grain types (e.g. sorghum) can also be efficiently processed. In addition to its high flexibility, the Polymatik scores with its highest level of hygiene, automatic cleaning and fast recipe changes. Gluten-free food is in high demand primarily in western industrial countries. Between 2011 and 2013, the market for such products has grown by 44 % to a volume of 10.5 billion USD. Around 30 % of Americans today have cut down or completely eliminated food containing gluten from their diets due to health reasons. "Pasta manufacturers also want to take advantage of this market potential and offer their customers high-quality pasta made of gluten-free raw materials such as corn or rice," explains Dr. Andreas Kratzer, Head of Business Unit Pasta & Noodles at Buehler.
