ISM reports positive trial results for the use of its taste potentiator, Maxarite~™ Delite, in reduced salt processed cheese. Low salt cheese containing Maxarite Delite consistently came top in taste tests when compared with standard and low salt equivalents. The addition of the taste potentiator enables salt reduction of 50%, while boosting saltiness and overall flavour intensity. These results offer further evidence to support the use of Maxarite Delite in the development of processed cheese, cream cheese and cheddar cheese, which not only offer improved nutritional profile, in line with governmental initiatives for reduced salt intake, but also meet consumer demand for great tasting, healthier dairy products.
