摘要

Chocolate is one of the most common sweet snacks consumed if world-wide. Taste and texture are widely accepted. Recent research has shown that health benefits of components of cocoa, such as polyphenols1 or serotonin promote the healthy aspects of chocolate. On the other hand chocolate snacks are high in fat and sugar, putting them in the crossfire of criticism in relation to the increasing problems of obesity. Obesity has taken on epidemiological proportions in many Western countries , so that many governments are developing strategies to reduce-obesity in their population. In Switzerland, for example, the food industry itself has taken the initiative and defined several axes of action.
