Use of vinegar as a food condiment or ingredient is discussed. Aspects considered include: foods whose flavour is enhanced by vinegar addition; foods containing vinegar as a functional ingredient; the need for a proper balance between salt, acidity and sweetness in flavour formulations; and the sensory properties of different types of vinegar.
