North American B&I customers are often a contradiction in terms with respect to their appreciation of South American and Latino flavors. They enjoy the fiesta atmosphere and tasty dishes created for a special theme day, be it Mexican, Jamaican, Cuban, Brazilian, etc. But, on a daily basis, they tend to avoid what they believe will be "hot" and/or "spicy." On balance, they tend to go for "generic" classics such as Vera Cruz red snapper or grilled chicken breast with mango and black bean salsa.
