North American B&I customers are often a contradiction in terms with respect to their appreciation of South American and Latino flavors. They enjoy the fiesta atmosphere and tasty dishes created for a special theme day, be it Mexican, Jamaican, Cuban, Brazilian, etc. But, on a daily basis, they tend to avoid what they believe will be "hot" and/or "spicy." On balance, they tend to go for "generic" classics such as Vera Cruz red snapper or grilled chicken breast with mango and black bean salsa. Of course, you still can't go wrong with a taco, fajita or quesadilla station, operators report.
