This month, the Olympic Games return to their Greek roots. The Acropolis, however, will not be the only thing contributing to an authentic vibe in Athens. Aramark, working with Greece-based Daskalantonakis Group, will forgo Americanized versions of Greek food to serve up traditional taverna fare from various cities and islands throughout the country. "Logistically, this will be absolutely the largest that we've done," says Aramark executive chef Michael Crane, in describing the contractor's award to provide foodservice for the Summer Games. The customer base will comprise more than 30,000 athletes, coaches, officials and others involved with putting on the games, to whom Aramark will serve about 60,000 meals, not including the snack bars.
