Hfm's regional meeting on natural disaster and pandemic planning, held at the University of Medicine and Dentistry of New Jersey in Newark, focused on some frightening possibilities that every foodservice director should consider. Disasters are generally unavoidable—and even statistically inevitable, said moderator Gordon Meriwether, principal of the Uriah Group, a crisis management consultancy. Even so, with careful planning and a bit of foresight, the damage of a natural disaster or terrorist attack can be controlled.
