During his 32 years in foodservice design, Orlando Espinosa, principal at Orlando Espinosa & Associates in Glen Mills, Pa., has learned the ins and outs of a renovation. Espinosa speaks about steps smaller operators can take to weather the storm of a renovation. "Being prepared for the unexpected is number one. You have to start with a plan.
