In June, a Culinary Education Center will open at Yale Uni-versity, offering a one-year training program for current employees. During the first two weeks, students will spend an intensive 80 hours learning the basics, from knife skills to braising, and then they'll be immersed in a 32-week internship program to develop and hone their craft.
