“Microgreens” is a marketingterm used to describe tiny, tender, ediblegreens that germinate in soil or a soil substitutefrom the seeds of vegetables andherbs. Smaller than “baby greens,” andharvested later than “sprouts,” microgreenscan provide a variety of leaf flavors, such assweet and spicy. They are also known fortheir various colors and textures. Amongupscale markets, they are now considereda specialty genre of greens that are goodfor garnishing salads, soups, plates, andsandwiches.
