A new Wisconsin cheese that "starts like a Cheddar and finishes like a Blue" made its debut at the Fancy Food Show in San Francisco earlier this month. Weinlese, which means "vintage" in German, is the result of a partnership between Seymour Dairy, of Seymour, Wisconsin, and Red Barn Family Farms, a group of small sustainable Wisconsin dairy farms. Red Barn Family Farms was founded by veterinarian Dr Terry Homan and his wife, Paula, and is certified by the American Humane Association.
