The idea of efficiency is gaining currency in the dairy industry, both in the UK and worldwide. Processors are looking to add value to their milk products, while farmers are working on gaining more on-farm efficiencies through ideas such as biodigestion for waste products. In the UK, notes Pete Dawson, policy director at Dairy UK, "The pursuit of added value means moving away from competition on price. To a degree, international competition can replicated with a particular product - provenance is the route to added value for products. Due to the recession, it's tough to get consumers and this may be the way forward."
