TThe evolution of the yogurt market has been an interesting and innovative one, from the traditional dairy product to ever more creative tastes combinations and functional formats. As calorie conscious consumers see yogurt as a healthy alternative, reducing calories from fat have been a consistent target for manufacturers, launching options such as low-fat or fat free options. Also, value has also been added in the category through functionality, high protein and increased indulgence. Because consumers are now becoming increasingly sophisticated in their tastes and requirements, manufacturers are looking for solutions that allow mainstream platforms to cover seemingly contradictory demands such as low fat, fat free, indulgent, fruity, rich and creamy.
