Over the past several years, dairy processors have proactively taken a holistic look at their products to truly understand how consumers' changing attitudes might impact them. Many manufacturers are seeing an increased demand for products with less sugar, fewer calories and more easily recognisable ingredients. For instance, a recent survey found that 47 per cent of consumers' purchasing decisions were significantly impacted when products claimed to have low/reducedo-sugar; 44 per cent were influenced by low and reduced calorie claims, according to The Joint WHO/FAO Expert Consultation on diet, nutrition and the prevention of chronic diseases: process, product and policy implications.
