I absolutely love roast lamb... whether a slow-cooked shoulder or a blushing-pink crown roast, lamb always delivers bags of flavour. This dish is great because the work is done ahead of time and it leaves you free to enjoy a relaxing day. You can use a selection of whatever veg you have in the fridge. Stuff that will happily cook long and slow and soak up the lamby juices - carrots, squash, onions and leeks all work well. You could even bung a load of little new potatoes in and not bother with the side dish, for a super simple one-pot wonder. But you'll be missing out... The accompanying potato dish is of French origin and was traditionally cooked in the village baker's oven after he'd finished the day's bread - hence the name 'Boulangere' potatoes. It is a more virtuous Dauphinoise and, with onions and a little rosemary, marries perfectly with the lamb. And it is just as forgiving, too - if you leave it in a bit too long, or need to keep it warm while awaiting guests, the taste or quality won't suffer. Oh and the smell that fills the kitchen while this lot cooks is just heavenly...
