EVISAN consists of the vintage assessment through a scientific discipline -Sensory Analysis. Such analysis allows the experts to learn the behavior of each vintage in our province and the type of wines the consumers will find on supermarket shelves. The score of the last seven vintages was determined with statistical confidence, obtained as a result of committed and responsible work of a panel of trained assessors on technical tastings within a scientific framework. These data have been submitted to the statistical analysis in the past three years, using a Web Information System Evaluation of Wines. These remarkable improvements allowed the optimization of the information provided to the wineries in the documentation, adding a sensory profile for each sample to the panel's observations. Likewise, we expect that the contributions that the panel of tasters give to the wineries in each report, will favor the local viticulture industry's development, so that our wines can reach higher positions in the rating scales and be recognized by new markets. In these reports, the global median of the manufacturing establishment is recorded, which shows the general assessment of its work. Another contribution of the tasting panel is suggestion of the final price for each sample, considering the quality/price relation demanded by consumers. This way, local wineries trust the panel the assessment of wine samples, made from different varieties and coming from different producing areas of our province. As a result of the panel's work, the statistical median of global vintage assessment is obtained, from which it is concluded that in the last vintages the wines elaborated in San Juan fit into the Very Good category. Complexity, balance and harmony are highlighted in them. That way, each vintage's global sensory profile clearly shows that, in general, our wines do not evidence flaws and are well defined in terms of bouquet, taste and balance: in other words, they evidence features that place them above the median quality of their type and varietal. Since the edition 2010 of this assessment, median scores according to geographic origin are recorded. This emerged as a starting point to deepen the origin and characterization of our wines, since the terroir is fundamental for its traceability. Firstly, medians were obtained according to the political division of our province into departments. In the last two editions of EVISAN, this issue has also been addressed from the geographic point of view, considering the valleys or the areas with special characteristics of our province: Tulum, Ullum, Zonda, Pedernal, Canada Honda, Huanacache, Pozo de los Algarrobos and Calingasta.
