摘要

This paper has highlighted the considerable interest in the application of HPU in food science and technology. The use of this new energy source to clean and disinfect wine barrels, extract colour, flavours and tannins from red musts, and for the management of fermentations will have many benefits to the wine industry in terms of cost savings and efficiency gains. Cavitus Pty Ltd has patented the process for the application of HPU to simultaneously clean and disinfect wine barrels. Information to show the efficacy of HPU in removing solid residues from the staves of oak barrels and planks, and for inactivating Brettanomyces/Dekkera cells will be presented in the next issue of this journal.
