In the seven years since I became editor of American Cake Decorating, there have been tremendous changes in the cake-decorating field. Rolled fondant has gone from curiosity to queen. The Food Network has popularized upscale cakes with a level of attention previously afforded only to wedding cakes. The availability of tools and supplies has increased infinitely.
