Once I got over the shock of the size of the cake, I began to feel excited about the prospect of taking on such a challenging commission. It started out at 16 tiers, but then the bride contacted me to say the wedding had been moved forward and that she was increasing the number of tiers to 19—so a nine-tier and two five-tier cakes—as she was worried that 16 tiers wasn’t enough! The bride was actually very quick to tell me that she wanted it to be all cake and that she didn’t want any “fake cakes.” My first thought when I heard that was, “Where will I get tins big enough?”
