Foliage, leaves, and other filler elements have gone main stage over the past few years. Brides are carrying bouquets minus the blooms and I don't believe you can swipe through Instagram without tripping over a monstera leaf or two. Working with buttercream can present a challenge with this type of aesthetic. Piped leaves quickly look like odd blobs without any flowers present. My answer to this flower-less buttercream quandary is stencils! Stenciling layers of leaves in varying shades of green creates a cake that is all at once sophisticated and super-duper easy to accomplish. The idea of layered stencils not only solves the problem of creating a dynamic buttercream cake sans florals, but it also provides an answer to those who love color and pattern but aren't keen on wafer paper. Intricately cut stencils done in layers with an eye toward color provide a very similar look without the, uhhh, papery flavor and mouthfeel.
