金斑蝶幼虫和蛹的营养成分分析

         

摘要

为了评价金斑蝶幼虫和蛹的营养价值,为其食用开发提供理论基础,本研究运用国家标准检测方法测定了金斑蝶幼虫和蛹的主要营养成分、矿质元素含量及能量值,并对其氨基酸组成进行分析评价。结果显示,金斑蝶幼虫和蛹的蛋白质含量分别为61.1%和71.8%,脂肪含量分别为12.5%和10.6%,碳水化合物含量分别为17.6%和11.9%,灰分含量分别为8.8%和5.7%,氨基酸总量分别为411.2 mg/g和497.7 mg/g,必需氨基酸总量分别为151.9 mg/g和184.8 mg/g,必需氨基酸占总氨基酸的比例分别为36.9%和37.1%,必需氨基酸与非必需氨基酸的比值均为0.59。与牛肉、猪肉、鸡肉相比,金斑蝶幼虫和蛹的碳水化合物和灰分含量高,粗脂肪含量、能量值低,蛋白质含量则均低于牛肉中的含量;矿质元素K、Ca、Mg、Cu、Mn含量及幼虫中的Fe含量都明显高,但Zn含量低于牛肉中的含量,P、Na含量则均低。对蛋白质氨基酸分的分析结果表明,苏氨酸为金斑蝶幼虫和蛹的限制性氨基酸,其缺失导致氨基酸结构不平衡,影响了蛋白质质量,为不适蛋白源。%In order to evaluate the nutritional value of larva and pupa of Danaus chrysippus and provide theoretical bases for their edible development , the main nutritional components , contents of mineral elements and energy values were determined by the national standard detection methods , and the amino acid composi-tion was analyzed.The results showed that the protein contents of D.chrysippus larva and pupa were 61.1%and 71.8%respectively;the fat contents were 12.5 %and 10.6%;the carbohydrate contents were 17.6%and 11.9%;the ash contents were 8.8% and 5.7%; the total amino acid contents were 411.2 mg/g and 497.7 mg/g;the essential amino acid contents were 151.9 mg/g and 184.8 mg/g, which occupied 36.9%and 37.1%of the total amino acid;and the ratio of essential amino acid to non -essential amino acid of D. chrysippus larva and pupa both were 0.59.Compared with beef, pork and chicken, the contents of carbohy-drate and ash of D.chrysippus larva and pupa were higher;the crude fat content and energy value were lower;the protein contents were lower than that of beef;the contents of K, Ca, Mg, Cu, Mn of D.chrysippus larva and pupa and Fe content of larva were higher;the Zn contents were lower than that of beef;and the contents of P and Na were lower .The analysis results of amino acid score showed that threonine was the limiting amino acid in D.chrysippus larva and pupa , and its deficiency leaded to the imbalance of amino acid structure and influenced the protein quality , which was unsuitable protein source .
