本研究通过对总糖含量测定方法进行改良,排除了桑椹色素对滴定终点判断的干扰。用改良直接滴定法测定了桑椹酒中总糖含量为3.72 g/L,小于干红葡萄酒中4 g/L 总糖含量的标准。改良后的测定方法简便快捷、准确稳定。%The determination method of total sugar content in mulberry wine was improved through elimi-nating the interference of mulberry pigment on the final judgment.The content of total sugar in mulberry wine was determined as 3.72 g/L by improved direct titration method,which was less than the standard of 4 g/L in dry red wine.The improved method was simple,rapid,accurate and stable.
