原酒品评定级过程质量控制方法研究

             

摘要

原酒的准确品评定级是生产质量稳定、品质优良的成品白酒的重要前提,但原酒品评定级过程中存在的品评标准难统一、人为不可控因素影响大的问题降低了原酒品评定级结果的准确性.通过在原酒品评定级过程中引入了原酒标准(STD)样品和原酒质量控制(QC)样品对品评过程进行质量控制,有效考核了原酒品评准确率,最终提升了原酒品评定级过程的可控性及结果的准确性.%Accuracy of raw liquor sensory evaluation and grade division (RLSG) process is important to production of stable quality and good quality of product liquor,but the accuracy of RLSG result is reduced by the problems of the RLSG process,such as evaluation standard is difficult to be unified and influence of man-made uncontrollable factors is great.Therefore,we introduced raw liquor standard(STD)sample and quality control (QC) sample to the RLSG process, and the accuracy of this process was effectively controlled. Results showed that controllability of the RLSG process and accuracy of the RLSG result were greatly improved.
